The shop keeps your name, email, mobile number, and delivery address so an order can be packed and updates can be sent.

Payment screenshots are stored with the order so the shop can confirm a UPI or bank transfer. The amount on the screenshot is read and compared with the order total before the order is saved. Screenshots are visible to you and to the shop team.
